Eggplant Parmesan @ Buca di Beppo

My brother invited me to lunch on New Year's Day to Buca di Beppo, but I couldn't make it. Now, I've been craving their Eggplant Parmigiana ever since. FYI, any other place I've tried this it is no good, somehow Buca has mastered it.

Mmmm... I love Bucca di Beppo. Absolutely my favorite place for Italian. And it's fun to get a big group together and sit in the pope room where the domed ceiling echoes carries everyone's conversations across the table.
